๐ฌ The Science
Shrimp cook extremely fast due to their small size and thin muscle fibers. The color change from translucent gray to opaque pink indicates the proteins have denatured. Curling into a C-shape is normal; tight O-shape means overcooked. Cornstarch creates a thin barrier that helps the glaze adhere and adds slight crunch.
